Ingredients
2 boneless, skinless chicken breasts
1 cup cottage cheese (full-fat or low-fat)
1/2 cup marinara sauce or tomato sauce
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs (optional)
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Fresh basil or parsley (for garnish)
Instructions
Preheat the Oven: Preheat your oven to 375°F (190°C).
Season the Chicken: Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
Cook the Chicken: In a skillet, heat olive oil over medium heat. Cook the chicken breasts for 5-6 minutes on each side, until golden brown and cooked through, or bake in the oven for 20-25 minutes.
Assemble the Bowl: Once the chicken is cooked, place it in a bowl. Spoon cottage cheese over the chicken, followed by a generous portion of marinara sauce. Sprinkle with Parmesan cheese.
Bake the Bowl: Place the bowl in the oven and bake for an additional 5-10 minutes, just to melt the cheese and warm the sauce.
Garnish and Serve: Top with fresh basil or parsley before serving.
