Ingredients
2 cups cottage cheese (preferably low-fat)
4 cups all-purpose flour
2 tablespoons sugar
1 tablespoon salt
1 packet (2¼ teaspoons) active dry yeast
¼ cup warm water
Optional Add-ins:
1 tablespoon garlic powder (for a savory twist)
1 teaspoon honey (for a hint of sweetness)
2 tablespoons fresh herbs like dill or parsley
Instructions
Preparation: Preheat your oven to 375°F (190°C). Grease a loaf pan with butter or non-stick cooking spray.
Activating the Yeast: In a small bowl, combine warm water and yeast. Let it rest for 5 minutes until frothy.
Mixing Ingredients: In a large bowl, mix cottage cheese, sugar, and salt. Gradually add the activated yeast mixture and flour, stirring until combined.
Kneading the Dough: Turn the dough onto a floured surface and knead for about 10 minutes until smooth. Alternatively, use a stand mixer with a dough hook.
First Rise: Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
Shaping and Second Rise: Punch down the dough, shape it into a loaf, and place it in the prepared pan. Let it rise for an additional 30 minutes.
Baking: Bake for 30–35 minutes until the bread is golden brown and sounds hollow when tapped.
Cooling: Remove the bread from the pan and let it cool on a wire rack before slicing.
Notes
Ensure your yeast is fresh for proper activation.
Use room temperature ingredients for even mixing.
Avoid over-kneading to prevent a dense loaf.
Check the bread’s internal temperature; it should reach 190°F (88°C) when done.
