Ingredients
1 cup unsalted butter, softened
1 ½ cups granulated sugar
2 large eggs, room temperature
1 tablespoon key lime zest
2 tablespoons key lime juice
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup shredded coconut (sweetened or unsweetened)
½ cup powdered sugar (for rolling)
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Cream butter and sugar until light and fluffy.
Add eggs, lime juice, and lime zest, mixing until combined.
Fold in flour, baking powder, salt, and shredded coconut until a soft dough forms.
Chill dough for 30 minutes for best results.
Roll dough into tablespoon-sized balls, then coat generously in powdered sugar.
Place on prepared baking sheet, leaving space between cookies.
Bake 10–12 minutes until cookies are set but still soft. Cracks will appear on top.
Cool on the baking sheet 5 minutes before transferring to a wire rack.
