Description

These Chicken Cordon Bleu Quesadillas are a golden, cheesy delight with tender chicken and melted cheese in every bite. Perfectly crispy on the outside and gooey inside, they make a quick, satisfying meal for lunch or any occasion.


Ingredients

  • 2 boneless, skinless chicken breasts, flattened to ½ inch

  • Salt and pepper, to taste

  • ½ tsp garlic powder

  • ½ tsp smoked paprika (optional)

  • 4 large flour tortillas

  • 1 cup shredded Swiss, mozzarella, or provolone cheese

  • 1 cup cooked smoked chicken, thinly sliced

  • Optional: sautéed spinach, roasted red peppers, or mushrooms

  • 1 tsp vegetable oil or butter for pan-frying


Instructions

  • Flatten and Season Chicken: Place chicken between parchment paper and gently pound to ½ inch thickness. Season with salt, pepper, garlic powder, and smoked paprika.

  • Prepare Tortillas: Lay tortillas on a clean surface. Place chicken in the center, layer with cheese, smoked chicken, and optional vegetables. Fold tortilla over filling.

  • Cook Quesadillas: Heat oil or butter in a non-stick skillet over medium heat. Cook each quesadilla 3–4 minutes per side until golden and cheese melts.

  • Serve: Let quesadillas rest 1–2 minutes, then cut into halves or quarters. Serve with your favorite dipping sauce or a fresh side salad.
