- 1.5 pounds boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3/4 cup Caesar dressing
- 3 cups romaine lettuce, chopped
- 1/2 cup Parmesan cheese, grated
- 4 ciabatta or hoagie rolls
- 1 cup cherry tomatoes, halved
- 8 strips bacon, cooked
- 1 cup croutons
Instructions
- 1. Pat chicken breasts dry and drizzle with olive oil. Season evenly with garlic powder, Italian seasoning, salt, and black pepper on both sides.
- 2. Heat a grill or large skillet over medium-high heat. Cook chicken for 6-7 minutes per side until internal temperature reaches 165°F. Let rest for 5 minutes, then slice.
- 3. While chicken cooks, prepare bacon until crispy. Chop romaine lettuce and halve cherry tomatoes.
- 4. Slice ciabatta rolls in half and toast them lightly until golden brown.
- 5. Spread Caesar dressing on both halves of each toasted roll.
- 6. Layer the bottom half with chopped romaine lettuce, followed by sliced chicken.
- 7. Add cherry tomato halves, crumbled bacon, grated Parmesan cheese, and a few croutons.
- 8. Drizzle additional Caesar dressing if desired, then top with the other half of the roll.
- 9. Serve immediately or wrap tightly for packed lunches.
Notes
Store assembled sandwiches in the refrigerator for up to 24 hours wrapped tightly. For best results, keep dressing separate and add just before eating. Cooked chicken can be stored separately for 3-4 days. Substitute rotisserie chicken for quicker preparation. Add avocado, roasted red peppers, or jalapeños for extra flavor.
