- 4 cups Roma tomatoes, diced
- 8 ounces cream cheese, softened
- 1/2 cup sour cream
- 1/3 cup fresh basil, chopped
- 3 cloves garlic, minced
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 tablespoons balsamic vinegar
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
Instructions
- 1. Dice tomatoes into quarter-inch pieces, place in a colander, sprinkle with salt, and let drain for 15 minutes. Pat dry with paper towels.
- 2. In a large bowl, beat together softened cream cheese and sour cream until smooth and creamy with no lumps.
- 3. Fold in shredded mozzarella and grated Parmesan cheese until evenly distributed. Season with salt, black pepper, and red pepper flakes.
- 4. Add drained tomatoes, chopped basil, and minced garlic to the cheese mixture. Fold gently to combine.
- 5. Drizzle balsamic vinegar and olive oil over the mixture and fold until everything is evenly incorporated.
- 6. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
- 7. Transfer to a serving bowl, drizzle with additional olive oil, and garnish with fresh basil leaves before serving.
- 8. Serve with toasted baguette slices, pita chips, crackers, or fresh vegetables.
Notes
Store in an airtight container in the refrigerator for up to 3 days. Drain excess liquid before serving leftovers. For best results, add tomatoes no more than 4-6 hours before serving to prevent excess moisture.
