BBQ Chicken Stuffed Sweet Potatoes

  • 4 large sweet potatoes
  • 2 cups cooked chicken breast, shredded
  • 3/4 cup BBQ sauce
  • 1 cup shredded cheddar cheese
  • 1/4 cup red onion, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • 1/2 cup sour cream
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons green onions, sliced

Instructions

  1. 1. Preheat oven to 400°F. Scrub sweet potatoes clean, pat dry, and pierce several times with a fork.
  2. 2. Rub sweet potatoes with olive oil and sprinkle with salt. Place directly on oven rack or baking sheet.
  3. 3. Bake for 45-60 minutes until tender when pierced with a fork.
  4. 4. While potatoes bake, combine shredded chicken with BBQ sauce in a skillet over medium heat.
  5. 5. Heat chicken mixture for 5-7 minutes, stirring frequently, until warmed through and bubbling.
  6. 6. Remove sweet potatoes from oven and let cool for 5 minutes. Cut a lengthwise slit down the center of each.
  7. 7. Gently squeeze ends together to open up the center and fluff the flesh slightly with a fork.
  8. 8. Spoon BBQ chicken mixture generously into each sweet potato pocket.
  9. 9. Top each stuffed potato with shredded cheddar cheese.
  10. 10. Return to oven for 5-10 minutes until cheese is melted and golden.
  11. 11. Remove from oven and top with sour cream, red onion, cilantro, and green onions before serving.

Notes

Store leftovers in airtight containers in the refrigerator for up to 4 days. Reheat in a 350°F oven for 15-20 minutes or microwave for 2-3 minutes. These can be frozen for up to 2 months—wrap individually and thaw overnight before reheating. For dairy-free version, omit cheese and sour cream or use plant-based alternatives.
