- 4 large sweet potatoes
- 2 cups cooked chicken breast, shredded
- 3/4 cup BBQ sauce
- 1 cup shredded cheddar cheese
- 1/4 cup red onion, finely diced
- 2 tablespoons fresh cilantro, chopped
- 1/2 cup sour cream
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons green onions, sliced
Instructions
- 1. Preheat oven to 400°F. Scrub sweet potatoes clean, pat dry, and pierce several times with a fork.
- 2. Rub sweet potatoes with olive oil and sprinkle with salt. Place directly on oven rack or baking sheet.
- 3. Bake for 45-60 minutes until tender when pierced with a fork.
- 4. While potatoes bake, combine shredded chicken with BBQ sauce in a skillet over medium heat.
- 5. Heat chicken mixture for 5-7 minutes, stirring frequently, until warmed through and bubbling.
- 6. Remove sweet potatoes from oven and let cool for 5 minutes. Cut a lengthwise slit down the center of each.
- 7. Gently squeeze ends together to open up the center and fluff the flesh slightly with a fork.
- 8. Spoon BBQ chicken mixture generously into each sweet potato pocket.
- 9. Top each stuffed potato with shredded cheddar cheese.
- 10. Return to oven for 5-10 minutes until cheese is melted and golden.
- 11. Remove from oven and top with sour cream, red onion, cilantro, and green onions before serving.
Notes
Store leftovers in airtight containers in the refrigerator for up to 4 days. Reheat in a 350°F oven for 15-20 minutes or microwave for 2-3 minutes. These can be frozen for up to 2 months—wrap individually and thaw overnight before reheating. For dairy-free version, omit cheese and sour cream or use plant-based alternatives.
