- 2 cups cooked chicken breast, shredded
- 1/2 cup BBQ sauce
- 8 slices bread (Texas toast or sourdough)
- 2 cups sharp cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 4 tablespoons butter, softened
- 1/4 cup red onion, thinly sliced
- 2 tablespoons fresh cilantro, chopped (optional)
Instructions
- 1. In a medium bowl, combine shredded chicken with BBQ sauce until well coated.
- 2. Butter one side of each bread slice generously with softened butter.
- 3. Place one bread slice butter-side down and add a layer of mixed cheeses.
- 4. Top cheese with about 1/2 cup of BBQ chicken mixture, spreading evenly.
- 5. Add red onion slices and cilantro if using.
- 6. Top with another layer of cheese and place second bread slice butter-side up.
- 7. Heat a skillet or griddle over medium-low heat.
- 8. Cook sandwich for 4-5 minutes until golden brown on the bottom.
- 9. Carefully flip and cook another 4-5 minutes until cheese is melted and bread is golden.
- 10. Remove from heat, let rest for 1 minute, then slice diagonally and serve.
Notes
Store leftover BBQ chicken mixture separately in an airtight container for up to 4 days. For best results, assemble sandwiches fresh rather than storing assembled. Reheat in a skillet over low heat or in a 350-degree oven wrapped in foil.
