Description

A mouthwatering grilled cheese sandwich loaded with tender BBQ chicken and melted cheese between crispy, golden bread for the ultimate comfort food experience.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 1/2 cup BBQ sauce
  • 8 slices bread (Texas toast or sourdough)
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 4 tablespoons butter, softened
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh cilantro, chopped (optional)

Instructions

  1. 1. In a medium bowl, combine shredded chicken with BBQ sauce until well coated.
  2. 2. Butter one side of each bread slice generously with softened butter.
  3. 3. Place one bread slice butter-side down and add a layer of mixed cheeses.
  4. 4. Top cheese with about 1/2 cup of BBQ chicken mixture, spreading evenly.
  5. 5. Add red onion slices and cilantro if using.
  6. 6. Top with another layer of cheese and place second bread slice butter-side up.
  7. 7. Heat a skillet or griddle over medium-low heat.
  8. 8. Cook sandwich for 4-5 minutes until golden brown on the bottom.
  9. 9. Carefully flip and cook another 4-5 minutes until cheese is melted and bread is golden.
  10. 10. Remove from heat, let rest for 1 minute, then slice diagonally and serve.

Notes

Store leftover BBQ chicken mixture separately in an airtight container for up to 4 days. For best results, assemble sandwiches fresh rather than storing assembled. Reheat in a skillet over low heat or in a 350-degree oven wrapped in foil.
