- 1 1/2 cups all-purpose flour
- 1 1/2 cups old-fashioned rolled oats
- 3/4 cup packed brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup (1 1/2 sticks) unsalted butter, melted
- 1 cup apricot preserves or jam
- 1 tablespoon fresh lemon juice
Instructions
- 1. Preheat oven to 350°F and line a 9×13-inch baking pan with parchment paper.
- 2. In a large bowl, combine flour, oats, brown sugar, baking soda, and salt until well mixed.
- 3. Pour melted butter over dry ingredients and stir until mixture resembles coarse crumbs.
- 4. Press two-thirds of the crumble mixture firmly into the bottom of prepared pan.
- 5. Mix apricot preserves with lemon juice in a small bowl until combined.
- 6. Spread apricot mixture evenly over the pressed base layer.
- 7. Sprinkle remaining crumble mixture over the apricot layer.
- 8. Bake for 30 to 35 minutes until golden brown and filling is bubbling at edges.
- 9. Cool in pan for 15 minutes, then transfer to wire rack to cool completely.
- 10. For cleanest cuts, refrigerate for 1 hour before slicing into bars.
Notes
Store in airtight container at room temperature for 3 days or refrigerated for 1 week. Freeze wrapped bars for up to 3 months. Works well with other fruit preserves like raspberry, peach, or strawberry.
