Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups old-fashioned rolled oats
  • 3/4 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, melted
  • 1 cup apricot preserves or jam
  • 1 tablespoon fresh lemon juice

Instructions

  1. 1. Preheat oven to 350°F and line a 9×13-inch baking pan with parchment paper.
  2. 2. In a large bowl, combine flour, oats, brown sugar, baking soda, and salt until well mixed.
  3. 3. Pour melted butter over dry ingredients and stir until mixture resembles coarse crumbs.
  4. 4. Press two-thirds of the crumble mixture firmly into the bottom of prepared pan.
  5. 5. Mix apricot preserves with lemon juice in a small bowl until combined.
  6. 6. Spread apricot mixture evenly over the pressed base layer.
  7. 7. Sprinkle remaining crumble mixture over the apricot layer.
  8. 8. Bake for 30 to 35 minutes until golden brown and filling is bubbling at edges.
  9. 9. Cool in pan for 15 minutes, then transfer to wire rack to cool completely.
  10. 10. For cleanest cuts, refrigerate for 1 hour before slicing into bars.

Notes

Store in airtight container at room temperature for 3 days or refrigerated for 1 week. Freeze wrapped bars for up to 3 months. Works well with other fruit preserves like raspberry, peach, or strawberry.
